🌱 A perfect oil-free meal by @rachel.nordhus 🌱 zucchini chickpea patties, roasted sweet potato🍠 & red onion bulgur salad plus some crisp baked lotus root just because it’s so pretty to look at, we had never tried it before & when you’ve got a selection of different Asian veggies in front of you. . • Plant based, vegan, dairy free, oil free, soy free, gluten free, egg free, refined sugar free. . ✖️ Zucchini Chickpea Patties ~ 1 can chickpeas, drained, well-rinsed and mashed 1 onion, finely diced 1/2 medium zucchini, grated, liquid squeezed out A handful chopped parsley 2 tbsp red wine vinegar 1 tbsp sriracha sauce 1 tbsp vegan Worcestershire sauce 2 tbsp peanut butter 2 cloves of garlic, crushed 2 tsp ground cumin 1 cup certified gluten-free oats Salt and pepper to taste - Preheat oven to 190°C. Add the ingredients to a food processor and blend until well combined. If you find the mixture is too dry add a dash of water, if it’s too wet add some extra oats. Grab a handful of the mixture, roll into a ball then form a pattie. Lightly pan fry in a non-stick pan, a few minutes each side. Place on a lined baking tray & bake for 20 minutes. . .

📻 @mainstreetvegan It really is a lovely feeling. 💚💚the life i want to live is to cause the least amount of harm. Like all the other vegan folk around me. I wish I'd done it sooner! There is however a way of eating very healthily as a vegan and not. Luckily a large majority of vegans i assume would be healthy because of being asked where our protein is constantly 😂😂 In an attempt to stay on top of the haters we stay on top of all our vitamins and minerals with regular blood tests. Checking packaging all the time for sneaky unhealthy ingredients whilst eating a more wide variety of plants. Its been well over a year since i was sick last, a massive contrast to my pre-vegan days of getting sick three times a winter. One way to spread Christmas chia this year is to share this ​​𝗥𝗮𝘀𝗽𝗯𝗲𝗿𝗿𝘆 𝗖𝗵𝗶𝗮 𝗣𝘂𝗱𝗱𝗶𝗻𝗴​ on the mornings of Christmas week with your loved ones. ​ ​Christmas morning can be a little hectic so make it the night before and there will more time for opening presents! 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦 250g dairy-free yoghurt  50g chia seeds Extras Granola (I used my Homemade Chocolate Granola) Stewed Blueberries (simmer blueberries with 1 tablespoon of maple syrup until warm) Raspberries Peanut Butter 𝗠𝗘𝗧𝗛𝗢𝗗 1. Simply combine your yoghurt and chia seeds into a jar/tupperware. Mix the chia seeds in thoroughly, then pop in the fridge overnight 2. The next morning, layer up your glasses with granola/chia pudding/ blueberries or raspberries. 3. Drizzle a bit of peanut butter on top, and Bob’s ya uncle. ​ ​📸 : @whatluceeats

I’m back online after a flying visit to Geneva to see a pal; we wandered, chatted for hours and ate lots of delicious delights ☺️❄️. Head to my stories to see a few snaps! One of the highlights was this incredibly cute coffee shop that she took me too called @ohmartine- we planned on stopping for coffee and cake, but I spied someone else’s avocado toast and just couldn’t resist. Listening to by body’s savoury cravings, I went for it - a seriously tasty mid afternoon snack that kept me well and truly satisfied until dinner 😜. Now it’s back to London life, which feels incredibly fast paced in comparison, but equally nourishing in it’s own way as we approach the final run up to Christmas! 🎄✨ #mylifeisforliving#ninemoresleeps

Who fancies digging into one of these festive Raspberry chia Jam and Coconut Granola parfaits for brekkie?🙋‍♀️ Delicious Crunchy ‘n’ Creamy, fruity layers to fuel your morning😜 So quick to pull together too. Dessert for breakfast right😜Can’t say no to that😉 Happy new week to you all xx . . Chia jam Recipe👇 . 300g frozen raspberries 120 ml rice malt syrup A squeeze of fresh Lemon approx 1Tb 4 1/2 Tbls Chia seeds 1 extra handful frozen raspberries . Place first 3 ingredients into small saucepan, heat on a low temp stirring occasionally untill raspberries and rice malt syrup have melted and combined. Take off heat add Chia seeds Stir in well..leave to cool for 10 mins, and add handful of frozen raspberries.. stir and leave for 5 mins.. Place in a sterilized jar and keep in the fridge!
